A studio presenter against a static backdrop gives an encoder very little new information to describe from one frame to the next, so it can hold quality at a low bitrate without breaking a sweat. Then the football starts, and the same service that looked flawless an hour ago turns the penalty area into a smear of blocks.

Motion is expensive
Video compression works by describing what changed. A mostly static shot compresses beautifully because almost nothing changes between frames. A camera panning fast across a crowded stadium changes everything in every frame, and the encoder has to spend far more bits to keep up.
Add frame rate to that. Sport is often broadcast at fifty or sixty frames per second precisely because the motion demands it — at twenty-five, a fast ball becomes a stutter. But doubling the frame rate roughly doubles the information to be encoded. A channel that is comfortable at six megabits for drama may need well over ten for the same visual quality during a match.
When a provider does not allocate that headroom, you see it exactly where it hurts: blocking around the ball, smearing on quick pans, and detail collapsing in the crowd. It is not your connection. It is the encoder running out of budget at the worst moment.
The neighbour problem
Every streaming service runs behind broadcast. Segments have to be encoded, packaged, distributed to an edge server and buffered by your player before you see anything, and each of those steps costs seconds. Thirty to sixty seconds of delay is entirely normal.
Which is fine until someone next door on terrestrial television celebrates a goal you have not seen yet. There is no configuration that eliminates this — it is inherent to the delivery model. What varies between services is how much delay, and that depends mostly on segment length and buffer depth.
There is a genuine trade here and it is worth understanding rather than fighting. A shorter buffer means less delay and less protection against a network hiccup. A longer one means you hear the goal late but you see all of it. During a cup final most people, given the choice, would rather be twenty seconds behind and uninterrupted.
Kick-off is the load test
Streaming demand is not evenly distributed. It is a spike, and everyone in the same country wants the same match at the same second. A service that is perfect on a Tuesday afternoon can fall apart at eight o'clock on a Saturday, because that is when its infrastructure is under genuine load.
Your own network has the same shape. Your neighbours are all streaming at the same time, and on 2.4 GHz Wi-Fi you are all competing for the same congested band. If you are going to run a cable to one device in the house, make it the one you watch sport on.
